Went to a buffet for lunch yesterday, but they had baked chicken, turnips, cabbage, rutabagas, and black-eyed peas. And a small salad bar.
For dinner, I made beef stroganoff with cauliflower instead of rice, potatoes or pasta. I thinned out the sauce a little too much, so I did serve it over a piece of toast. I wish I'd done twice as much cauliflower instead of the toast -- but the toast was yummy.
The best part about dinner last night was that k really likes Hamburger Helper potatoes stroganoff. I told her that I was making (from scratch!) the same thing, it would just be different because I was making it myself. When I fixed her plate, I told her it was different. She looked at it and said, "Yeah, I know; you just cut it up."
And. She. Ate. It. And asked for more! Usually with this sort of thing, I have to either fight her to try it or fix her something else. Let me tell you -- if I say this or nothing...she'll eat nothing. And not complain. So for me to get something homemade and yummy and with extra veggies she wouldn't otherwise eat into her tummy -- that is a massive WIN.
Today, I'm cruising for a new recipe. Or at least something I can have fun modifying. :)
