I bet you can guess why the title is what it is. I'm not sure what's up with the weight gain. I had a few carbs over the weekend (although mostly good carbs). I had a sandwich yesterday. Didn't drink enough yesterday. My weigh-in was after breakfast because I couldn't get to the scale. (And, yes, I do know that there is about a 5 pound fluctuation in weight. But I can't stand to see the number go up right now.)
So last night, I had pizza.
Lightly grease a 9x13 pan. In a medium bowl, mix 1-8oz package cream cheese (softened), 2 eggs, garlic powder, pepper, and about 1/4 c grated Parmesan until well blended. Spread in the bottom of your pan and bake in a preheated 350 degree oven for about 13 minutes. Take out and let cool for at least 10 minutes. Spread pizza sauce, sprinkle on cheese, and add your favorite pizza toppings. (I had onion, pepperoni, and bacon.) Bake for another 10 minutes or so, until the cheese has melted.
You won't be eating this pizza with your hands, but it has all the right flavors and the crust is relatively bread-like. Thin, but not crispy like a traditional thin crust. I did precook the onions, sauteing them until translucent. I thought about chopping up a tomato and putting it on top, but opted out.
I know I did some other low-carb things, but they are not coming to mind at the moment. I need payday to hurry up and be here (it's tomorrow) because I'm out of my usual breakfast items, and everything else in the house for breakfast is bread or cereal or sugary. :/
